Found! Pam the Butcher

I went to a fun cooking night at Company’s Coming! yesterday: Pam the Butcher’s meat class. Pam Ginsberg has been in the business since she was a girl, working at her father’s stall at Eastern Market. She’ll give you her number and walk you through carving a turkey over the phone, or grind up the chain of a filet mignon you’ve bought and combine it with high fat chuck for burgers as a bonus.
She’s at Wagshal’s. Whether you need a hangar steak, some really delicious corned beef, homemade sausages, or a whole pig, she’s your lady.

She hasn’t been there for awhile; she had jumped from Brookeville to Bowers Fancy Cheese in Eastern Market, and now she’s back to butchering at Wagshall’s.
